How often are these updated? I was looking at the NL depth chart and Maybin is still listed as the starting CF for FLA. Can I typically trust this sheet throughout the season?

Yes, these are updated regularly. There are some quirks in them, though.... when in doubt, click through to the team view, where you can see how the playing time is allocated. What's happening here is that we need to shift Ross to CF, as Maybin's the only guy listed as a CF right now, so he defaults to a starter. I'll get that corrected, thanks.
